Ingredients: makes 18 – 20 cookies
180g plain flour
125g rolled oats
1 tsp cinnamon
½ tsp baking soda
½ cup softened butter,
¼ tsp salt
1 egg
155g light brown sugar
1 tsp vanilla
1 big apple, finely chopped, tossed in with lemon juice
Instructions:

Preheat the oven to 180°C (350°F).

Mix dry ingredients: In a bowl, stir together:

Cinnamon

Baking soda

Cream butter and sugar: In another bowl, beat together the butter and brown sugar until well combined.

Add egg and vanilla: Mix in the egg and vanilla extract until smooth.

Combine mixtures: Gradually add the dry flour mixture to the wet mixture and stir until just combined.

Fold in apples: Add chopped apples and mix gently to incorporate.

Scoop and shape: Scoop out portions of the cookie dough and drop them onto lined baking trays. Space the cookies 5–7 cm apart and lightly flatten them with your fingers or a spoon.

Bake: Bake for 15 minutes, or until the edges are lightly golden.

Cool: Let the cookies cool on the tray before serving or transferring to a wire rack.
