Apple, Cinnamon and Oatmeal Cookies

Ingredients:   makes 18 – 20 cookies

 

180g plain flour

125g rolled oats

1 tsp cinnamon

½ tsp baking soda

½ cup softened butter,

¼ tsp salt

1 egg

155g light brown sugar

1 tsp vanilla

1 big apple, finely chopped, tossed in with lemon juice

 

Method:

Preheat oven at 180c. In a bowl stir together flour, oats, cinnamon, baking soda and salt. In another bowl beat butter and brown sugar until mixed. Mix in egg and vanilla.  Add flour mixture to egg and vanilla mixture and mix until combined, then mix in apples. Scoop mixer out and drop onto baking trays spacing cookies 5 -7 cm apart and slightly flatten them. Bake 15 minutes. Allow cookies to cool on the tray.
